How is Moroccan cuisine?

 

Moroccan cuisine:

Moroccan cuisine is thought to be one of the best cuisines in the world. Moroccan recipes are well known for the variety of ingredients. The legacy has a history of hundred and thousand years that is marked by the influence of the people who lived in Morocco. There are native Moroccan dishes and there are fusion dishes as well. Today’s Moroccan cuisine is amixte of Arabic, Persian, Berber and Mediterranean recipes yet it has a unique style of its own.

Being an farming country Morocco produces a large number of plants. There are native crops and then there are those which the invaders brought with them. Moroccan dishes thus, are prepared using a variety of

vegetables and fruits.

Dry fruits are also used in Moroccan dishes; pine nuts, resins, walnuts and almonds to name few. Not only these are used in sweet dishes but also added to meat and rice recipes.

Both red and white meat is used in Moroccan recipes. Sea food also makes an important part of the menu. A relatively uncommon type in this category is pigeon meat which is cooked as main dish or as a dessert in the form of a cake.

Spices make an important aspect of most of Moroccan dishes. Cumin, coriander, cinnamon, dried ginger and turmeric make a routine ingredient in the Moroccan recipes which not only add color and aroma to the dish but also enhance the flavor.

Cooking Fashion:

The most common way of cooking a dish is to stew it. Many of the Moroccan recipes are prepared in pottery called Tajine. The pot is set on coals and meal is prepared on its heat. The food prepared in tagine is not only nutritious but also delicious and fragrant.

Moroccan Expertise
It is almost impossible to narrate all the recommended Moroccan recipes yet there are few that are considered to be the specialties of Moroccan cuisine. Hereunder are three of the Moroccan dishes that are must on a Moroccan menu specialy in Fez city.

Couscous:
It is the famous Moroccan dish which is made using different vegetables and sometimes fruit.

Tajine:

Tajine is an aromatic stew which is prepared with red (mainly lamb) or white meat (chicken or fish). Other ingredients include olives, onions, tomatoesHealth Fitness Articles, dry fruit (almonds usually) and herbs to enrich the taste.

Harira (soup):
Harira makes an important part of the Moroccan cuisine. It is a spicy soup with tomatoes as main ingredient, and it used most daily receipes in ramadan.

Madrassa Bouanania :

The Madrasa Bou Inania is a madrasa(School)  in Fes, Morocco, founded in AD 1351–56 by the Abu Inan Faris, who also founded the Madrasa Bou Inania in Meknes. It is widely acknowledged as an excellent example of Marinid architecture.
This is the only madrasa in Fes with a minaret. Opposite the main doorway of the madrasa is the entrance to the dar al-wudu (ablutions house). Left and right of the central court there are class rooms.
The madrasa was renovated in the 18th century. During the reign of Sultan Mulay Sliman, entire sections were reconstructed. In the 20th century, major restoration work was performed on the load-bearing structure, the plaster, wood and decorations.
This spiritual boarding school contains 26 rooms for students (Tollab). There are also 56 studying rooms which can host 2 students each: students used to go in these rooms for revisions, they only used water, bread and olives to eat while they were there.
The madrasa is one of the few religious places in Morocco that is accessible for non-Islamic visitors. Opposite the Madrasa Bou Inania is the Dar al-Magana, a wall with a hydraulic clock that was built in relation to the madrasa.





University of al-Karaouine:

The University of al-Karaouine or is the oldest operating university in the world. The al-Karaouine mosque was founded by Fatima al-Fihri in 859 with an associated madrasa (School).
It designed into one of the leading universities for natural sciences. It wasn’t right until 1957 that the university added physics, mathematics, chemistry and foreign languages.
 which eventually became one of the leading spiritual and educational centers of the historic Muslim world. It became a state university in 1963 and is still an important institution of studying today.





The Museum Of batha:

The museum was originally a palace of hearing and a summer residence built in the late nineteenth century by Sultan Moulay Hasssan 1. The building was completed and embellished by his successor, Moulay Abdel Aziz. The buildings are not very old but the proportions and arcades, galleries, courtyards and gardens are a beautiful harmony.

This palace was thus erected into a museum "The Popular Arts and Traditions" in 1915 by the will of Chérifien government and the French Protectorate.

Tanneries In Fez:

Probably the most fascinating sites in Fez is the oldest leather tannery in the world. The tannery days back at least nine centuries. When getting close to the tannery the smell is the first to appear. The smell drifts around the balcony or the roof from where all the activity can be viewed and is enough to put off the most excited of tourists. The stench is worth braving as the view over the balcony  or the roof allows those watching to see a site that has never been changed since the 11th century.
 
The lifestyle of a tanner is so difficult. it is considered to be one of the hardest and dirtiest careers in  Fez.
 The art of tanning is run and done by men. Most of the families and workers live around the tanneries and their skills are inherited from generation to generation via the male family tree though a tradition less and less evident as education becomes obligatory and horizons expand. In response to this and to continue to keep traditional skills in existence a new artisanal school has been put in place on the side of Fez City.
